The organizer's current exhibitor page lists the hall hours as 10:00 a.m.–4:30 p.m. Tuesday and Wednesday, then 10:00 a.m.–3:00 p.m. Thursday. A separate current attendee FAQ lists Thursday as 9:00 a.m.–2:00 p.m. Because the official pages disagree, do not build staff travel, demonstrations, catering, or freight release around Thursday's hours until show management confirms the final schedule in writing.

What is International Pizza Expo

International Pizza Expo is a trade show and education event built specifically around the pizza business. The current official name is International Pizza Expo, although exhibitors and operators routinely shorten it to Pizza Expo. It is a different event from Pizza Expo Columbus, so an international team should check the city and year on every registration, hotel, freight, and service document it receives.

The Las Vegas event combines a supplier exhibition with education, demonstrations, competitions, and industry meetings. That mix divides an operator's attention. Your booth therefore needs one clear job: help the right operator make one product or operating decision that would be difficult to make from a brochure or video call.

Who attends Pizza Expo

The official FAQ names independent, chain, and franchise pizzeria and Italian-restaurant owners, managers, buyers, and decision-makers. Food brokers and distributors are also welcome. For your booth decision, the important person is the operator who must decide whether your product will work in a real store.

That operator may be responsible for one location or a group, but the first questions are practical. Will this ingredient stay consistent through normal prep? Can this oven recover during a rush? Will this box protect the pizza through delivery? Does this ordering tool fit the systems already in use? A booth earns a serious follow-up when it makes one of those decisions easier.

Do not turn an audience claim into a promised meeting list. Before reserving space, write one sentence describing the U.S. operator you need to meet and the decision you want that person to make. Then review the live exhibitor list and ask show management for its latest audience information. If the available evidence cannot show that your customer type is present, attend first rather than paying to test the audience from a booth.

Start with the moment in the store that changes. Perhaps the dough becomes more consistent, the kitchen recovers faster during a rush, the pizza survives delivery better, or an ordering failure disappears. Choose the moment that matters most to the operator you want to meet.

Build the booth message around that change, not around a category label. “Pizza equipment” leaves the operator asking what improves. “Premium ingredient” does not say whether the result survives normal prep. “Restaurant technology” says nothing about setup or downtime. State the task, the condition, and the result the visitor can check.

Which suppliers should consider exhibiting

Pizza Expo is a strong candidate when your product is ready for the U.S. pizzeria market and an operator can evaluate it on the floor. Before you commit to a booth, three conditions should be true:

  • the operator needs an in-person taste, test, or comparison before moving forward;
  • your team can show the result under stated conditions instead of relying on a claim;
  • a serious visitor has a clear way to order, test, install, or get support after Las Vegas.

Keep every performance claim tied to the model, load, and operating method actually tested.

The booth layout must also follow the machine's route from crate to demonstration position and back out again. Give the booth team the packed dimensions and weight, final operating position, service clearances, and required utilities before it draws the stand. The current FAQ says full-time company employees may set up an exhibit in Nevada, but may not operate heavy machinery or lifting equipment. Use that as a planning boundary and confirm the actual rigging, labor, fire-review, and removal work with the 2027 manual and official providers.

Let packaging and technology survive real store conditions

Test packaging with the pizza and delivery trip it is meant to protect. Let the operator pack the product and open it after a realistic hold. Ask the visitor to check crust condition, temperature, moisture, and box strength. Put the quoted print quantity, lead time, food-contact document, and customization limit next to the test so the sample is connected to an orderable product.

If you sell software, run one order or staff task from beginning to end and include a failure the store may actually face. Show what hardware and connection the workflow uses, what another system must integrate with it, what the operator pays, and who answers when it fails. A complete transaction that survives questions is more useful than a tour of every screen.

In either case, end the demonstration by agreeing on the next test. Record what the visitor uses now, the condition that matters in that store, who else must approve the change, and who will arrange the follow-up. That turns a product demonstration into a buying step instead of a feature tour.

Use competitions and education without losing your buyer

Education begins before the expo floor opens. Decide in advance which team member will attend a useful session and what question that person must bring back to the booth. Work backward from the time the booth must be ready, not from your flight. Put four owners on one deadline sheet: the person controlling international freight and customs; the person ordering venue services and labor; the person securing approval for the live demonstration; and the person responsible for packing and return freight.
